Together with the Sweet and Sour Chicken, this Chicken Fajita is my joint favourite of the FYP main meal offerings.
There's a good mix of filling and tasty ingredients, with the rice, chicken, vegetables and red kidney beans. It reconstitutes well too, provided you get your technique right.
Unlike one or two of the other meals, this one is seasoned in a way that provides a good balance and depth of flavour, courtesy of the fajita paste which contains a mix of spices, lemon, garlic and onion powder.
My only minor disappointment is the use of white rice. I'd have personally preferred brown rice which is a wholegrain and far healthier since the essential nutrients and fibre have not been stripped out.
Still, overall this is tasty and satisfying, and a good addition to my supplies. I give it five stars.
